Clay cookware is slow in heating up but retains heat for a longer period of time. Therefore food cooks evenly and slowly.
Clay is naturally alkaline therefore acidic food cooked using clay pots tastes slightly different as the pH is balanced out.
That is probably why any recipe made with Tamarind as an important ingredient such as south indian puli kulambu or Fish gravy, tastes better when made in a clay pot.
